Pumpkin cream recipe

For the coldest nights this winter, nothing better to do all kinds of creamed vegetables to warm. So we decided to make a great cream of pumpkin, which is more than good.

Pumpkin has a high content of vitamins A, B and C which makes it a perfect food for diabetics, as it regulates blood sugar, eliminates water retention, purifies our body improving intestinal problems, clean the lungs and bronchi due to its high content of antioxidants and is one of the foods with satiety properties, suitable for diets, as it decreases the craving for sweet.

Pumpkin cream recipe

Ingredients:

  • 2 tablespoons olive oil
  • Pinch of salt
  • 1 media onion
  • 2 medium potatoes
  • 800 grams of pumpkin
  • Ground pepper
  • Nutmeg

Preparation:

We put in a pot, two tablespoons of oil, and when hot we add the onion julienne, potato into small cubes, and pumpkin also tacos. We add a little salt, and let sauté everything for about 20-25 minutes to blend the flavors and ingredients are the most tender.

After that, we add a few grinds of pepper and nutmeg, and added water, not too much, just a little to cover the ingredients (cream for us not to become too liquid).

We let everything boil and cook until reduced water, about 30 minutes. After this time, with the help of a blender make a great pumpkin cream. We serve it on dolls and decorate with cubes of toasted bread.
